Flourless Salted Peanut Butter Crunch Cookies; soft and chewy cookies loaded with perfect sweet-salty peanut butter flavour and crunchy bites of granola!

Let’s be honest, it’s no secret that I’m an absolute peanut butter monster. Growing up in Scotland, it wasn’t a common ingredient in most kitchens here like it is in the USA. It wasn’t until my mid-teens that I had the pleasure of tasting the thick, nutty spread. I’ve never looked back.

I already have two great peanut butter cookie recipes on the blog at the moment. One for nice chunky cookies loaded with chocolate chips, and another for bite sized vegan cookies. Both are great, but for a nut butter lover like me, two recipes isn’t enough.

Welcome to the stage, these Flourless Salted Peanut Butter Crunch Cookies. A mouthful in more ways than one.

Flourless Salted Peanut Butter Crunch Cookies

These cookies are so peanut buttery, it’s bonkers. While using flour in conventional cookie recipes can really dilute the peanut flavour, these cookies know no bounds to their nuttiness. Made using over half a jar of classic creamy peanut butter, that was to be expected really. Have I said peanut butter enough yet? Peanut butter peanut butter peanut butter.

Despite having “crunch” in the title thanks to the peanuts, these cookies are definitely in the soft-cookie camp. Soft, chewy cookies laced with delicious toasty granola little crunchy peanut pieces. These little beauties are irresistible for peanut butter fans!

Also, due to the modest amount of sugar and the high fibre, protein and healthy fat content in these Flourless Salted Peanut Butter Crunch Cookies, they’re really a healthy treat! I completely condone eating biscuits/cookies for breakfast no matter what’s in them of course, but these little guys would make a decent healthy start to the day!

To add substance, that crunch, and extra peanut flavour, I stirred in a healthy helping of my favourite Peanut Butter Me Up granola from Breakfast by Bella. It adds perfect texture to the cookies, and is so handy to have for breakfast or for snacking.

If you don’t have any of BBB’s lovely granola, you could substitute your favourite nutty granola or cereal. You could also throw some chocolate chips into this recipe (I know I will next time), a little chocolate never made anything worse!

To make these cookies, preheat your oven – 180 degrees for conventional ovens or 160 degrees for fan ovens – and line one or two baking trays with some greaseproof paper. One would probably suffice as these cookies really don’t spread or expand that much.

In a large bowl, stir together some peanut butter, sugar, bicarbonate of soda and vanilla until combined. Classic creamy peanut butter is best here, such as Sun Pat or Jif, though crunchy would probably work fine too. I wouldn’t recommend using thinner kinds such as Meridian or Pip & Nut, as delicious as they are, the texture isn’t right for these cookies, so save them for your toast!

Add some granola, egg and salt, and stir again until you achieve a nice thick cookie dough texture. Resist the temptation to eat it all straight away, unless you really want to, who likes sharing anyway?

Use a spoon, cookie scoop or just your hands to place 10-16 lumps of dough onto your lined baking trays. I made 13 cookies out of my mixture, I might have made it to 14 if I hadn’t been “taste-testing” so much…

Use a fork or spoon to flatten the tops of the lumps of dough slightly, as these cookies do not spread much in the oven.

Sprinkle a little extra sugar or salt on top of the cookies if you like! I added both, because yum.

Bake the cookies for 10-12 minutes in your preheated oven. Mine took exactly 10, though if you would like a crisper cookie, feel free to bake them for longer. When ready, the edges should look slightly browned and the middle of the cookie should still feel soft (this will firm up as they cool!).

Allow the Flourless Salted Peanut Butter Crunch Cookies to cool slightly on their trays, before transferring to a wire rack to cool completely before eating. If you have the patience!
