Sweet Cinnamon Breakfast Bites; quick, easy, delicious and healthy little bites made with sweet dates, granola, nuts and cinnamon!

So I’m currently undertaking a summer placement at a legal firm here in Aberdeen. It’s essentially a 6 week internship to gain experience and get a flavour of what working in law after graduating can be like. My first 3 weeks are currently being spent in the employment law division, and the following 3 weeks shall be spent in the property law division. Already dreading that part, property law was NOT my strong suit at university!

It’s also the first time I’ve ever worked 9am-5pm (or later) for 5 days a week, like a proper adult and stuff. And OMG I do not know how you guys can do this every week. I’m exhausted, I’ve run out of office outfit inspiration, and I’ve only just finished the first week??

University has not prepared me for this full time employment malarkey. Help.

Basically, as I’m now packing lunches and snacks every day instead of just rolling into the kitchen every few hours and nibbling at the contents of the fridge, I’m trying to get creative with my food prep! I’m never going to be the type that arranges those satisfyingly symmetrical rows of weekly meal-prep boxes, but it helps to be organised. Saving time, and saving money for workweek eats is definitely worth the prep!

On that note, enter these adorable sweet cinnamon breakfast bites!

Soft, sweet and gently spiced bites full of sticky dates and warming cinnamon. These sweet cinnamon breakfast bites are so handy, and surprisingly satisfying for being so small! Just by whizzing a few ingredients together, you can make these lush little snacks to nibble on while you work your way through the day.

Whip these up on a Sunday night and you’ll thank yourself for not spending your cash on crappy “healthy” snacks from the supermarket. These bites offer all the benefits of natural foods like fruit, oats and nuts, while actually tasting good too!

Thanks to the wonderful Breakfast By Bella, these nuts are full of sweet cinnamon flavour. Using their Nutty Nosh granola really helped make these bites more filling and delicious, and gave me the idea to call them “breakfast bites” rather than the eerily medicinal sounding “energy bites.” Plus, y’all know how much I love oats.

Enough chit chat though. To make these sweet cinnamon breakfast bites, you’ll need to start by using a sharp knife to slice up and remove the pits from a few medjool dates. These can be pricey, but I find online bulk buying can save money, plus, a little goes a long way with this toffee-tasting fruit!

Add the dates, along with some nuts, granola, seeds, vanilla, cinnamon and a little salt to a food processor or blender.

Pulse or consistently run the processor until all the ingredients are well broken down and the mixture is beginning to clump together. Some little shards of nuts are totally fine!

At this stage, you can add a little water to help the mixture stick together and blitz it again. The amount you will need will depend on the stickiness of your dates. I needed just 1/2 tbsp.

Switch off the processor and tip the mixture out into a bowl.

Use your hands to pull clumps of the sticky mix from the bowl and roll into 10-14 little balls. I got 14 from mine.

Once rolled, you can enjoy these straightaway or chill them in the fridge to firm up a little for later on. I tend to pop one in my mouth as I place the others into the fridge!

Sweet Cinnamon Breakfast Bites

Sweet Cinnamon Breakfast Bites; quick, easy, delicious and healthy little bites made with sweet dates, granola, nuts and cinnamon!

Ingredients

  • 180g (1 cup) medjool dates (roughly 9 dates)
  • 75g (¾ cup) Nutty Nosh granola (or your favourite granola cereal!)
  • 75g (¾ cup) cashews or any other nuts
  • 1 tbsp flax or chia seed (optional)
  • ½ tsp cinnamon
  • ½ tsp vanilla extract
  • Pinch of salt
  • ½ to 1 tbsp water if necessary

Instructions

  1. Use a sharp knife to slice up and remove the pits from your medjool dates.
