Vanilla Latte Granola; sweet crunchy clusters of heart-healthy oats, nuts and seeds, flavoured with sweet vanilla and rich coffee. Perfect for breakfast, dessert toppings or snacks!

Even as a silent decaf drinker (don’t judge me, I have IBS), I still need coffee in my life. Is that the whitest thing I’ve ever written?

Whether it’s dark, hot and bitter (like me), or sweet and milky, or just in coffee and walnut cake form, I LOVE coffee. It took a few months, and many brutal shifts in a busy coffee shop job, for me to truly appreciate that the cosy smell of those roasted beans can actually taste good too!

Since then, creating coffee based recipes has been a lot more fun.

Today’s coffee based recipe took inspiration from those days where you really need some caffeine with your caffeine. The days where no alarm clock on the planet could keep you awake. The days you need pegs to keep your heavy eyelids open. The days that you thought were Fridays but they were actually Thursdays. Whether you’re a fresh-faced teenager at school or a 50+ mum that’s still busy as ever, we’ve all had them.

Incorporating your caffeine hit into your breakfast may seem a little strange … until you taste it.

This toasty Vanilla Latte Granola is so ridiculously easy to make, and so handy to have, that you might just wonder why the hell you don’t always pour coffee into your breakfast bowls.

Crunchy clusters of filling oats, enveloped in the flavour of sweet nostalgic vanilla and rich but gentle coffee. Just sweet enough to remind you of your favourite coffee shop latte, and just strong enough to remind you to wake the hell up. (I stir in some walnuts for that classic coffee and walnut flavour, and some milled flax seed to help with that old IBS I mentioned earlier!)

Sprinkle handfuls of this Vanilla Latte Granola over creamy yoghurt, top your porridge or pancakes with it, submerge it in ice cold milk, or simply eat it from your eager hands. There is no wrong way to eat granola, and it’s definitely not just for hipsters.

One batch of this Vanilla Latte Granola should last you at least a few days, a perfect recipe for all you January meal-preppers or any temporary vegans!

Now, let me show you just how easy it is to make…

First, preheat your oven and look out a large baking tray. The longer/wider the better, more space to cook means crunchier granola!

In a large bowl, mix together all the ingredients until everything is well coated.

Tip the mixture into your tray.

Bake in the preheated oven for 25 minutes, stirring once half way through.

Remove from the oven and allow to crisp up and cool completely. At this stage, feel free to stir through some dried fruit, cocoa nibs, coconut flakes, or even some chocolate chips!

And that’s it! This granola will last for 2 weeks in an airtight container, and is such a handy breakfast or snack to have in your kitchen.

  2. OMG, this granola looks so amazing. I haven’t made homemade granola in about a year (I know, what in the what is wrong with me) and your recipe just inspired me to jump back on the granola bandwagon! YUM!

    1. Aw I’m glad to hear it, thank you! It’s really good, I’ve been eating it with yoghurt and banana for the past 2 weeks straight haha!
