Ok so, my birthday is in November but that doesn’t matter.

Summer time makes me think of birthdays. Growing up, all my friends birthdays fell in the warm months of the year, even my parents’ do. Personally, I’ve always been fonder of the darker winter months, but the blue-sky days between May and September never go unappreciated.

Birthday cake in our house usually involves obscene amounts of chocolate, so these white chocolate birthday cake blondies had to reflect that. Over 300g of creamy white chocolate is baked into these bad boys. Clean eating brigade, grab your spirulina and run.

Essentially, these are just my Best White Chocolate Blondies all dolled up for a special occasion. With all the upcoming summer time birthdays in my calendar, it felt appropriate to create these addictively gooey and delicious white chocolate birthday cake blondies. And it definitely felt appropriate to make them fun and colourful for the few sunny days we savour. Rainbow sprinkles improve everything right?

If you’re not familiar with the blondie, it’s literally just a white chocolate version of a brownie! Rich, velvet soft, chocolate-heavy treats with a flaky, crackled top. And this time with extra swirls of simple yummy icing and pretty sprinkles. Can these white chocolate birthday cake blondies get ANY more camp??

Basically, if you have a birthday coming up, or you just really fucking love white chocolate and rainbow sprinkles, you HAVE to make these.

Gloriously chocolatey and joyfully sweet, these birthday cake blondies are likely to put a smile on anyone’s face, birthday or not! Bring these to a barbeque and you’ll officially be everyone’s favourite person. Unless, of course, you eat all the sausages before anyone else gets any. Don’t do that…

To make these pretty and delicious birthday cake blondies, preheat your oven – 160 degrees for conventional ovens or 140 degrees for fan ovens.

Grease and line a tin to bake the blondies in, both 8×8 and 8×12 inch tins have worked well for me.

Chop up some butter and white chocolate and melt them together gently in a heatproof bowl either in the microwave or over a pan of simmering water until smooth. Be very careful as white chocolate doesn’t always behave as well as other chocolates, it tends to require a lot less heat.

While the chocolate and butter melt, in a large bowl, whisk together eggs, sugar, and vanilla until just combined.

Once melted, pour the butter/chocolate mixture into the bowl of egg mixture and whisk to incorporate.

Tip in some flour, chocolate chunks/chips and salt, and gently fold together with a spoon or spatula until just combined.

Add a handful of rainbow sprinkles and give it a final stir.

Pour the blondie batter into the prepared tin and bake for 55-60 minutes until the blondies are no longer wobbly and have a nice shiny, crackled top.

Allow to cool completely in the tin.

Stir a spoonful or two of water into some icing sugar until you attain a thick, spreadable icing. Feel free to add more water or icing sugar to achieve your desired consistency!

Use a spoon, knife or piping bag to drizzle and swirl the yummy icing all over the blondies.

Flurry some more rainbow sprinkles on top to decorate.

Now simply slice them up (15-20 squares or bars usually does the trick) and scoff them!

  • 3 eggs
  • 220g caster sugar
  • 1 tbsp vanilla extract
  • 130g plain flour
  • 100g white chocolate chunks/chips
  • Pinch of salt
  • Rainbow sprinkles (plus extra for decoration)
  • 150g icing sugar (for decoration)

Instructions
