It’s common knowledge that the centre of a chocolate chunk cookie is the best part. By “common knowledge,” what I really mean is “my opinion,” but that’s by the by.
Those golden edges, with that touch of crispness thanks to melted butter and cooked sugar, are delicious. That said, there’s nothing (for me, as iterated above) that tops that soft chewy middle. It’s where the chocolate hides, and it’s where the cookie is juuuuust cooked enough to no longer be considered dough.
That’s exactly why I’m such an advocate for the cookie bar. It’s the centre, the whole way through.

So what makes these salted chocolate chunk cookie cubes different from other cookie bars? Well, they’re sliced into cubes instead of bars. Innovative? Groundbreaking? I know. You’re welcome.
These salted chocolate chunk cookie cubes were born out of curiosity and out of need. I was baking a little treat to take to colleagues at the restaurant I work in, and there are a lot of them. Not only that, most of them are food-loving exercise junkies with big appetites. I wanted to try making a bite-sized cookie treat and make sure no one got left out after staff dinner, so here we are.
Gentle yet nostalgic notes of butter, brown sugar, and vanilla give this soft chewy cookie its flavour. Flaky sea salt adds an addictive touch of savoury that balances out the sweetness. Add in those chunks of chocolate and you’ve got a dreamy snack-sized treat on your hands. Dark chocolate if you want bold and satisfying. Milk chocolate if you want smooth and rich. White chocolate if you want creamy and gentle.
As with every recipe I post, I never discourage a bit of creativity. Feel free to stir in some chopped nuts, some dried fruits, some flavoured liqueur, or some spices to customise these salted chocolate chunk cookie cubes to your liking.
Similarly, you can get creative with the cooking time too. If you want to dance on the limits of soft and doughy, 25-30 minutes of baking should do the trick. If you want them a bit firmer and crisper, go for 30-35 minutes in the oven.

To make these salted chocolate chunk cookie cubes, simply follow the recipe below:
Ingredients
- 160g (10 ½ tbsp) soft salted butter
- 120g (½ cup) caster sugar
- 120g (½ cup) dark brown sugar
- 2 tsp vanilla bean paste or vanilla extract
- 1 egg
- 1 egg yolk
- 250g (2 cups) plain or type ’00’ flour
- 1 tsp bicarbonate of soda
- 250g (9 oz) dark chocolate, milk chocolate, or white chocolate, broken or chopped into chunks
- Pinch of flaky sea salt
Instructions
- In a large bowl, beat together your butter, sugars and vanilla until creamy.
- Stir the egg and egg yolk in and beat well to combine.
- Add the flour and bicarbonate of soda to the bowl and stir well to combine into a thick dough.
- Tip the dark chocolate chunks into the bowl of dough and stir to evenly distribute.
- Grease and line a 30cm x 18cm (12in x 7in), or 20cm x 20cm ( 8in x 8in), baking tin with greaseproof paper.
- Tip the dough into your prepared in and flatten it out evenly with your hands or the back of a spoon.
- Cover and chill the the bowl of dough for 30 minutes, or anywhere up to 48 hours. This isn’t essential if you’re in a hurry but will ensure the bars have a perfect texture!
- Preheat your oven – 180 C / 160 C fan / 350 F / gas mark 4.
- Once the dough has chilled and the oven has preheated, bake the tray of cookie dough for 25-35 minutes. When baked it should look and feel dry on top, it may still feel soft but it will firm up slightly as it cools!
- Allow to cool completely.
- Slice into 20-30 cookie cubes.
- Enjoy!
