Chocolate may not immediately spring to mind when daydreaming about your after-dinner nibble in hot weather. However, it should not be forgotten either.
These new Simple White Chocolate Truffles are the ideal antidote to warm weather. They are a perfect bite-size chilled treat. Offering all the same rich indulgence of a chocolate dessert, with the refreshing nature of a milkshake.

Biting in, the mouth is met with a dusted layer of sweetness from icing sugar. As that initial feeling of cold thickness, the truffle melts into creamy and buttery joy. The vanilla-kissed sweetness of the white chocolate lingering and leaving you asking for more.
The best part about these truffles is the minimal effort required to create them. You’ll need a bit of patience as the mixture thickens in the fridge, but hands-on time is so little that you can squeeze these even into the busiest day. They are ideal to make for yourself, with a partner or even with little ones to keep them entertained with all this extra time indoors.
You don’t need any particular equipment to make these Simple White Chocolate Truffles. You will be all set as long as you have a saucepan, a spatula, a bowl, and a teaspoon!

Simple White Chocolate Truffles

BE A MAVERICK: why not add a grating of lemon zest to the truffle mixture before rolling?
Ingredients
- 200ml (¾ cup + 1tbsp) double or whipping cream
- 400g (14 oz) good quality white chocolate
- Icing sugar (for dusting)
Instructions
- In a medium saucepan, gently heat the cream until it is steaming and hot to the touch.
- Pour your chocolate into the pan with the cream and leave to stand for 2 minutes.
- Gently stir the mixture until smoothly melted together into a thick ganache.
- Transfer the mixture to a bowl, cover with clingfilm and refrigerate until cold and firm to the touch.
- Use a teaspoon to scoop up cherry-tomato-sized balls of the chocolate mixture. You can of course make these larger or smaller if you want to!
- Roll the scoops between your hands until you have nice round chocolate truffles. You may find a sprinkle of icing sugar on your palms may make this easier, especially if you have warm hands.
- Dip and roll your truffles around in the icing sugar to give them a light dusting.
- Keep in the fridge until ready to serve.
- Enjoy!
