In December, I like to knocking back wee glasses of Bailey’s like it’s some kind of new (much tastier) Yakult.
Whether that’s my inherent Scottish penchant for borderline alcoholism or just because it’s “festive” I’m not quite sure yet. Either way, Bailey’s is addictively delicious.
Similarly addictively delicious is this Bailey’s Chocolate Tiffin.
Ideal as an affordable Christmas gift for loved ones, or just as a tasty treat over the holiday period, you need a tray of this in your life. It’s absurdly simple to make, and will disappear just as quickly. All the nostalgic joy of biting into a thick slab of chocolate tiffin, with the added bonus of a cheeky liqueur.
If you are from outside of Scotland, you may have never experienced the joy of a fat square of tiffin. Tiffin was supposedly created in South Western Scotland. It is much like the fridge cakes or rocky roads of elsewhere in the world; a big cuboid of chocolate filled with crunch and chew.
Rich smooth chocolate, punctuated generously with chunks of crisp chocolate biscuits, sweet chewy cherries and a seductive undertone of warming whisky cream. Cheat on your mince pies for a bit of tiffin this season, it’ll be worth it.
This Bailey’s Chocolate Tiffin can be made with either milk or dark chocolate, depending on how rich you like your treats to be. You can easily make it gluten free by using wheat free biscuits, and you could probably even make it vegan with a dairy free liqueur and some creativity!

Bailey’s Chocolate Tiffin

BE A MAVERICK: why not use crushed gingerbread biscuits instead to give this tiffin an extra festive feel?
MAKE IT GLUTEN FREE: simply swap out the chocolate biscuits for a wheat free chocolate biscuit instead!
Ingredients
- 500g (18 oz) milk or dark chocolate
- 100g (7tbsp) salted butter
- 8 tbsp Bailey’s Irish Cream Liqueur
- 200g (7 oz) Oreos or Bourbon biscuits
- 100g (¾ cup) dried cherries or cranberries
- 100g (3 ½ oz) white chocolate (optional, to decorate)
- Sugar stars/sprinkles/edible glitter (optional, to decorate)
Instructions
- Lightly grease a 30 x 20cm (12 x 8in) tin and line the base and sides with some greaseproof paper. This will help you lift it out of the tin!
- In a large bowl, weigh out your chocolate, butter and Bailey’s.
- Melt the mixture slowly, either over a pan of gently simmering water or in the microwave using 30 second blasts, until smooth.
- Bash up your biscuits into chunky rubble.
- Stir the biscuit crumbs and cherries/cranberries through the melted chocolate mixture until well incorporated.
- Pour the Bailey’s Chocolate Tiffin mix into your prepared tin and smooth out the top.
- Melt your white chocolate until smooth, as before.
- Drizzle the melted white chocolate over the tiffin mix.
- Use the tip of a knife or the handle of a spoon to swirl and marble the two chocolates together. This is purely for aesthetics!
- Scatter over some sprinkles or glitter (if using).
- Allow the Bailey’s Chocolate Tiffin to set in a cool room or on a cold windowsill for a couple of hours until firm. You can do this in the fridge but it may cause the chocolate to form an unsightly white bloom!
- Once set, use a sharp knife to slice the Bailey’s Chocolate Tiffin into bars, squares or bites.
- Enjoy!
