As hilariously tragic as those tweets about girlfriends being dumped for their boyfriends’ sourdough starter are, I must say I love the newfound passion for quarantine baking.
I’ve seen people on every form of social media taking up bread making, cake baking and more. It’s truly lovely. Taking the time to create something, even if it doesn’t turn out as delicious as expected, is unbelievably therapeutic. Using your hands and intuition is always enjoyable. If people are learning new things at the same time, I can only see positives. Especially when everything outside is so uncertain right now.
Banana bread is another thing I’ve seen plenty pictures of recently. This makes me incredibly happy.
Banana bread, especially this Easy Banana Bread, is simple to make, making it ideal for beginner bakers. You could even get little ones involved!
Light and moist, somewhere between cake and bread. Gently sweet with the comforting flavour of ripe baked banana. Endlessly customisable depending on your flavour preferences. I’m really struggling to find a reason why you shouldn’t make this Easy Banana Bread.
I’m sharing this recipe in the knowledge that many people can’t get any flour in the shops at the moment. However, I can promise you that this recipe is really easy to experiment with using whatever you have in the house.
Don’t have plain flour?
Use self raising (without adding the raising agents later), oat flour, a gluten free flour blend or even 00 flour.
Don’t have butter?
Use margarine, coconut oil, olive oil or even vegetable oil.
Don’t have sugar?
Use golden syrup, honey or maple syrup.
Don’t have eggs?
Use an extra banana and 5 tbsp milk.
Want to make a vegan banana bread instead?
You can even make this Easy Banana Bread into 12-16 muffins (mixture straight into the tin with no cases), or even into a 6″-9″ cake if you prefer! Again, I’m really struggling to come up with any reason that this shouldn’t already be in your oven as we speak. 🙂

Easy Banana Bread
Notes
BE A MAVERICK: add some chocolate chips, spices, peanut butter, Nutella or Biscoff to this recipe!
This Easy Banana Bread will keep for up to 4 days in an airtight container or on a covered cake stand.
Ingredients
- 80g (â…“ cup) butter, margarine or vegetable oil
- 80g (â…“ cup) soft brown or caster sugar
- 2 eggs
- 3 (1 cup) medium mashed ripe bananas
- 250g (2 cups) plain flour
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- Pinch of salt
Instructions
- Preheat your oven – 180°C / 160°C fan / 350°F / gas mark 4.
- Grease and line a regular loaf tin.
- In a large bowl, whisk together your butter/margarine/oil and sugar until combined.
- Add in the eggs, whisking again until smooth.
- Add the mashed banana and whisk it up again.
- Add your flour, raising agents and salt. Mixing again until completely combined. Careful not to over-mix though, as this can result in a heavy bread!
- Pour the mixture into your prepared tin.
- Bake in the preheated oven for 50-60 minutes until risen, firm, and a skewer inserted into the centre can be cleanly removed.
- Allow the banana bread to cool completely in the tin.
- Enjoy!
