The United States of America’s food culture is one as famous as it is notorious.
While the rest of the world may not always hold it in the highest esteem, compared to countries with much more admired cuisines, no one can deny its influence. Perhaps you first you cast your mind to enormous international names such as McDonald’s, Subway, Taco Bell, Krispy Kreme, or Ben & Jerry’s. Perhaps instead you think first of the foodstuffs themselves; pulled pork, hot dogs, loaded fries, cupcakes, red velvet, chocolate chip cookies, brownies.
Chocolate brownies are available in all sorts of places, all over the world, at any time of day. You’ll find them in coffee shops, in restaurants, in luxury patisseries, and of course in home kitchens. They can be a snack, a dessert, or even a vehicle for sweet toppings.
This US creation, supposedly first introduced to the world via Illinois in the late 1800s, is everywhere. For that reason, I simply couldn’t ignore it for the USA instalment of Desserts of the World. It’s a treat you’ll find in all the states, unlike other beloved but more regional inventions.
Classic chocolate brownies, like the ones you see before you today, are irresistible for good reason. They are sweet and nostalgic in their chocolate-vanilla flavour, while also being rich and satisfying. They fit just as nicely alongside a strong coffee as they do beside a perfect sphere of fior di latte gelato.

Today I’m sharing a recipe for classic chocolate brownies in their purest form. No additions or inclusions, no tricky steps or fancy equipment. You can make these in just one big mixing bowl, and leave the oven to do the rest. Obviously a little patience is required when baking and cooling them, but other than, even a total beginner baker can tackle these!
Sink your teeth through the crispy, crackly top (made possible by a generous measure of old-fashioned granulated sugar). Enjoy the chewy fudginess of the chocolate brownie’s dark centre, both sticky-sweet and beautifully bold in flavour.
Of course, these are also perfectly customisable. Add extra salt for a savoury hit, toss in some white chocolate chunks before baking, stir through some chopped walnuts, swirl in some blobs of peanut butter. It’s a simple, reliable, blank canvas treat, for any occasion.

To make these classic chocolate brownies, simply follow the recipe below:
Ingredients
- 170g (6 oz) bittersweet chocolate
- 115g (7 ½ tbsp) salted butter
- 275g (1 ⅓ cups) granulated sugar
- 3 large eggs
- 2 tsp vanilla extract or vanilla bean paste
- 30g (¼ cup) cocoa powder
- 100g (¾ cup) all-purpose flour
- Pinch of salt
Instructions
- Preheat your oven – 180°C / 160°C fan / 350°F / gas mark 4.
- Grease and line a tin to bake the brownies in, either 20x20cm (8x8in) or 20x30cm (8x12in) tins should work well.
- Chop up your butter and chocolate and melt them together gently in a heatproof bowl, either in the microwave or over a pan of simmering water, until smooth.
- Once melted, pour in the sugar and stir well to incorporate it into the mixture.
- Stir in your eggs, one at a time, followed by the vanilla. You should have a smooth dark batter at this point.
- Tip in the flour, cocoa, and salt and gently fold together with a spoon or spatula until just combined.
- Pour the brownie batter into your prepared tin and smooth it out evenly.
- Bake for 30-40 minutes until the brownies are no longer wobbly and have a nice shiny, crackled top.
- Allow to cool completely, or for AT LEAST 1 hour, before slicing if you can.
- Enjoy!
BE A MAVERICK: throw some walnuts or white chocolate chunks into the batter just before baking for extra texture and flavour!
These classic chocolate brownies will keep well in an airtight container for up to 4 days, but are best enjoyed fresh!
