It’s no secret that cookie dough is greater than its baked product.
Admittedly, it can be difficult to truly understand why cookie dough is better than an actual cookie. Is it the soft texture? Is it the unadulterated buttery flavour? Is it the arousing danger of the risk of food poisoning from both raw egg and uncooked flour? Is it the nostalgia of disobedience in your childhood kitchen as you ate from the mixing bowl? WHO KNOWS?
Regardless of the reason, cookie dough is wonderful. To the point that there are famous ice cream flavours dedicated to it, and now even restaurants and dessert shops serving “raw” cookie dough by the scoop!
Unfortunately though, packing a lunchbox full of raw dough to take to work or school might be just a tad strange. Also, it’s not exactly the most nutritious or safely edible snack. THAT’S WHERE THESE HEALTHY PEANUT BUTTER COOKIE DOUGH BITES COME IN.
Monday morning, I needed some snacks to pack to take to university with me. Something delicious that would travel well without refrigeration, and wasn’t just handfuls of leftover cake smushed into a plastic box. I needed cookies. But I couldn’t be bothered to mix, chill, bake and cool a whole batch. Hmmm…
After a little experimentation and some tweaks to get them just right, please welcome the Healthy Peanut Butter Cookie Dough Bites!
These are a new take on my older recipe for healthy cookie dough bites, these little beauties are much simpler, quicker, and cheaper to make. With added peanut butter. I hadn’t initially planned on publishing a recipe for them, but after much demand on Instagram, I concede.
These Healthy Peanut Butter Cookie Dough Bites are tasty, satisfying, convenient, and much more affordable than your average packaged “healthy” snack or protein bar. This recipe will let you make a batch of 16-20 bites, which should at least last you 2-3 days…right?
Most of the ingredients are of the kind that you might find lying in your kitchen cupboards. Oats, protein powder, syrup, peanut butter, salt, vanilla and some chocolate chips. You can even swap out the protein powder for more oats if you like!
You will need a blender or food processor for this recipe, just to get the oats nice and fine. If you don’t mind them chunky then you could probably manage without, though I can’t vouch for them!
You just need to place the oats into a blender or food processor and blitz for 2 minutes until they have broken down into a sort of fine powder.
Add in the protein powder, peanut butter, golden syrup, vanilla and salt, and blitz again for 1 minute. (You could do this part by hand if you prefer)
Keep the blender/food processor running as you gradually add cold water 1 tbsp at a time until you see a dough begin to clump together. It should feel like cookie dough, not too sticky but not too crumbly. You can add more oats/protein powder or more water to adjust.
Stir the chocolate chips through the dough.
Use your hands to roll the dough into 16-20 little balls, placing them on a cold plate or piece of greaseproof paper.
Once all rolled, store the bites in an airtight container for up to 5 days, or just over a week if kept in the fridge. The texture will be fine either in or out of the fridge, it’s your preference really!

- 250g (2 ½ cups) oats
- 50g (roughly 2 level scoops) vanilla or chocolate protein powder (or just more oats!)
- 5 tbsp peanut butter
- 3 tbsp maple syrup or golden syrup
- 1 teaspoon vanilla extract
- Pinch of salt
- Cold water
- 150g (5 oz) milk or dark chocolate chips
Instructions
