It’s been at least a month since the last Maverick Baking cookie recipe, so grab yourself a cup of tea and get ready for more sweet doughy musings.
Cookies and biscuits are beloved all over the world, no matter the time of year. However, there’s something about a hot drink and a cookie or two that just screams cold weather. Autumn and winter are the ideal seasons to get your baking practice in. Cold cloudy days create the perfect excuse to whack on the oven and bake something delicious to lift everyones’ mood.
Your Instagram feed is probably already beginning to fill up with warm tones, orange leaves, cups of hot chocolate and capsule wardrobe posts. I am utterly delighted to be adding to the narrative today with some cinnamon-spiked autumnal goodness.
The first cold-season recipe of the year is for these Soft Chewy Cinnamon Sugar Cookies. Just as delicious as they are wordy.
You could say they aren’t much to look at, with their rippling bumps and bulges of just-baked dough. Don’t underestimate these little beauties though, their sparkling cinnamon sugar and utterly divine interior will change your mind.

Impossibly soft and chewy while also remaining pleasantly light, you’re going to want to eat more than one of these Soft Chewy Cinnamon Sugar Cookies. I promise.
If you want to get creative and level these up even more, you could stir some white chocolate chips through the dough, or some chopped pecans. They are delicious as is but equally as deliciously customisable.
These cookies are also truly easy to make. They’ll require a little bit of time to chill in your fridge, but have a super-short baking time. If you wanted to make the dough a few days ahead of time before baking, it would be a great quick bake!

Soft Chewy Cinnamon Sugar Cookies

These Soft Chewy Cinnamon Sugar Cookies will keep well in an airtight container for up to 5 days. No need to refrigerate once baked, unless you like cold cookies!
Ingredients
For the Soft Chewy Cinnamon Cookies:
- 160g (10 ½ tbsp) softened butter
- 125g (⅔ cup) soft brown sugar
- 125g (⅔ cup) caster sugar
- 2 tsp vanilla extract/paste
- 1 egg
- 1 egg yolk
- 275g (2 cups) plain flour
- 1 tsp ground cinnamon
- ½ tsp ground ginger
- ¼ tsp ground coriander
- ¼ ground nutmeg
- ½ tsp bicarbonate of soda
- ½ tsp baking powder
- ½ tsp salt
For the cinnamon sugar:
- 125g (⅔ cup) caster sugar
- ½ tsp ground cinnamon
- ½ salt
Instructions
For the Soft Chewy Cinnamon Cookies:
- Line 2-3 baking trays with greaseproof paper.
- In a large bowl, beat together the butter, sugar and vanilla until light, fluffy and well combined.
- Add the egg and egg yolk one at a time, beating thoroughly between each addition until well incorporated.
- Add in all the remaining ingredients, and stir until a thick dough forms.
- Scoop the dough using two small spoons onto your prepared trays, using your clean hands to roll them into rough spheres. You should get 16-20 balls of dough.
- Place the trays of dough balls into the fridge to chill for at least 30 minutes (an hour or two is even better), this allows them to hold their shape better and come out nice and thick and chewy.
- In the meantime, preheat your oven – 200°C / 180°C fan / 400°C / gas mark 6.
- After chilling, bake the cookies on their trays for 11-13 minutes, or until lightly golden at the edges and dry-looking on top. They may look or feel underbaked at first but they will firm up nicely as they cool!
For the cinnamon sugar:
- In a small bowl, stir together the sugar, cinnamon and salt.
- While still slightly warm, sprinkle your cookies liberally with the cinnamon sugar until sparkling.

Hi how do I stop the cookies going so flat? Mine were like pancakes lol! Still Tasted amazing though.
Hi Amie, thanks for your comment! I would maybe check that the baking powder and bicarbonate of soda you are using are not expired or something – as they should help give the cookies a bit of a lift. Otherwise, I’d maybe recommend chilling the cookies for a bit longer to held solidify the butter in the recipe. I hope that helps?
