1. Vegan Biscoff Brownies
Vegan Biscoff Brownies; unbelievably rich and fudgy brownies, full of Lotus Biscoff flavour and crunch!
These have been an absolute reader favourite since the day they were published, garnering some lovely feedback on Instagram too. You’d never guess these weren’t made with butter, and Biscoff spread adds a bit of extra sweetness to the dark chocolate flavour.
2. Best Vegan Chocolate Chip Cookies
The Best Vegan Chocolate Chip Cookies; perfectly chewy cookies, crammed with chocolate chips and absolutely no animal products.
Weeks in the making, I concocted these during our first Veganuary challenge in 2020. Swapping out the usual butter for olive oil adds a gorgeously unique flavour to these cookies while keeping all the chewy texture you love!
3. Vegan Vanilla Cupcakes
Vegan Vanilla Cupcakes; fluffy plant-based vanilla cupcakes swirled with sweet whipped vanilla frosting.
No more missing out! If you have a party or event to cater, or you just love a cupcake, these are a fantastic dairy and egg free option. Top them with whatever you like to make these even easier on the eye.
4. Vegan Chocolate Almond Butter Cookies
Dark Chocolate Almond Butter Cookies; thick, soft and chewy cookies made with creamy almond butter and melting morsels of dark chocolate that happen to be completely vegan!
These were inspired by the UK’s favourite vegan cookie from Pret A Manger. They have that beautiful sweet-salty flavour combination that keeps your mouth coming back for more.
5. Vegan Chocolate Stout Cake
Vegan Chocolate Stout Cake: rich dark chocolate cake made with Guinness and topped with a fluffy vanilla frosting.
Using classic Guinness or your favourite dark sticky stout, you can create a stunning chocolate cake. Moist and dark and topped with a perfectly sweet frosting, this is a treasure of delicious contrasts.
6. Vegan Raspberry Dark Chocolate Muffins
Vegan Raspberry Dark Chocolate Muffins; fluffy vanilla muffins with frozen raspberries and 63% cocoa chocolate.
A simple celebration of bold flavours. These muffins make a great snack or breakfast and can be made by eve the newest of bakers.
7. Vegan Double Dark Chocolate Brownies
Vegan Double Dark Chocolate Brownies; deeply dark and velvety plant-based brownies studded with chocolate pieces.
For those who love it 70% and above! These brownies revel in their depth and darkness. Bringing a bold and bittersweet flavour to the rich density of a classic brownie, with no animal products.
8. Vegan Carrot Cake
Vegan Carrot Cake; a gloriously soft carrot cake dressed up with walnuts, orange zest, sultanas, and a creamy vanilla frosting.
So good, you’d never know it was vegan! This take on a British classic is an absolute favourite in our home. Carrying all the cinnamon-rich flavour and moisture of a carrot cake, and the sweet-tangy cream cheese frosting, with no butter or eggs!
Whatever you’re baking this month, I hope you can have fun and get creative with plant-based ingredients.
