Winter Berry Crumble; a deep blend of warm juicy berries under a cinnamon and ginger scented chunky oat crumble.
Few desserts tug on my heartstrings the way a crumble does.
Apple, pear, apricot, anything. Stick it under a buttery crumble topping and I’m yours.
However, despite its position in my internal ultimate ranking of all desserts ever, it’s one I’ve never actually published a recipe for. Something I consider truly unforgivable. So here you go.
This Winter Berry Crumble might not be the antidote to the misery of 2020, but it helps. It’s just the warm, filling, and delicious comfort we need, especially for those of us in cold climates. This can be a dessert, a breakfast, whatever you need it to be.
Sink your spoon through the crisp, golden, buttery crumble. Delve into that perfect squidgy middle, somewhat like a warm flapjack soaked in berry juices. Enjoy all the gorgeously rich bursting berries underneath. It’s truly a winter weather dream.
Of course, berries aren’t in the peak of their season in winter. In fact, they’re long out of season but thanks to the miracle of home freezers, that doesn’t restrict this recipe to summer baking. Frozen berries are not only convenient, but are often much cheaper by weight than fresh berries. They can keep as long as you need them to, they hold their nutrients, and you can bake them straight from the freezer.

In fact, this recipe is entirely made from kitchen staples. Oats, sugar, butter and a few spices are all you really need to make this Winter Berry Crumble. No fancy equipment required either, just a couple of bowls and whatever dish (or dishes) you’d like to serve it in.

Ingredients
For the fruit filling:
- 200g (1 rounded cup) frozen blueberries, blackberries, and/or raspberries
- 2 tbsp caster sugar
- 1 tsp vanilla extract
For the crumble topping:
- 150g (1 ⅔ cup) rolled oats
- 75g (5 tbsp) cold salted butter, cut into small cubes
- 2 tbsp caster sugar
- ½ tsp ground cinnamon
- ½ tsp ground ginger
- ½ tsp ground mixed spice
Instructions
For the fruit filling:
- Preheat your oven – 200 C / 180 C fan / 400 F / gas mark 6.
- Pour your berries into your chosen serving dish or 4-6 individual serving dishes.
- Spoon over the sugar and vanilla and mix a little to incorporate. Set aside.
For the crumble topping:
- Place all of your ingredients into a large mixing bowl and rub together with your fingers until you have a chunky crumble with no large lumps of butter. You can blitz them in a food processor for an even faster result!
- Scatter your lumpy crumble over the berries in your serving dish(es).
- Bake the crumble(s) in the preheated oven for 35-40 minutes or until the topping is crisp and golden.
- Allow to cool for 10 minutes before serving hot with cream, custard or ice cream.
