If you’ve been here any time before, you’ll know that I am one of those irritating, ungrateful people that mutters “I miss Winter” whenever the temperature creeps above 18 degrees celsius.

Hay-fever, and my general hatred of all things sweaty, means that I am not really into the summer time. However, that doesn’t mean it’s all terrible.

Strawberry season is a highlight of every year for me. Call me a Victorian farm child, I don’t care. Fresh, sweet, Scottish strawberries and raspberries are a beautiful thing. A thing that I like to take full advantage of, to the point that I’m sick of the sight of them come September.

Now fresh berries are always best even on their own, cold from the fridge, while staring outside at your cat who is sensibly hiding from the sun under a plant. They are also great in desserts though. You may think of strawberries and cream, fruity trifles, creamy pavlovas and other light summery desserts. Well, bitches, I’m about to surprise you. Today we’re going dense, rich and chocolatey. Put those meringues away. For now.

GURL. These chocolate chip summer berry brownies are nothing short of utterly heavenly. Velvety soft brownies, absolutely loaded with three kinds of chocolate, and studded generously with sweet-tangy summer berries. I want these every day for the rest of the year.

These chocolate chip summer berry brownies are as easy to make as they are to eat. Mix a few things together, bung it into the oven, and just let them cool, and you have THE BEST summer dessert. No frosting or decoration required, just pure, unadulterated YUM.

The brownies are delicious warm or cold, so eat ’em however you like!

Anyway, enough chat about fruit and stuff, let’s get down into these sexy brownies.

To make these chocolate chip summer berry brownies, you’ll first need to preheat your oven and grease and line a tin to bake the brownies in.

Chop up your butter and dark/milk chocolate and melt together gently in a heatproof bowl either in the microwave or over a pan of simmering water until smooth.

While the chocolate and butter melt, weigh your flour and cocoa powder into a small bowl and mix together a bit.

In a large bowl, whisk together the eggs, egg yolk, sugar and salt until just combined.

Once melted, pour the butter/chocolate mixture into the bowl of egg mixture and whisk to incorporate.

Gently toss your berries in a little flour, this can help prevent them from sinking to the bottom of the brownies!

Tip in the flour and cocoa mixture and your berries and chocolate chips, and gently fold together with a spoon or spatula until just combined.

Pour the brownie batter into the prepared tin, sprinkle over a couple more berries (if you have any leftover) and some more chocolate chips. I thoroughly recommend licking the bowl, the mixture is incredibly tasty.

Bake for 50-55 minutes until the brownies are no longer wobbly and have a nice shiny, crackled top.

Allow to cool for at least 45 minutes before slicing if you can. (This isn’t a quick bake, but it’s so SO worth it!)

Chocolate Chip Summer Berry Brownies; velvety soft and rich triple chocolate brownies studded with sweet summer berries!

Ingredients

  • 250g (8 1/2 oz) dark or milk chocolate
  • 230g (15 tbsp) butter
  • 65g (1/2 cup) plain flour
  • 60g (1/2 cup) cocoa powder
  • 3 eggs
  • 1 egg yolk
  • 250g (2 1/4 cups) caster sugar
  • Pinch of salt
  • 150g (1 1/4 cup) berries of your choice (I used fresh Scottish raspberries)
  • 100g (3 oz) dark or milk chocolate chips

Instructions

  1. Preheat your oven - 160°C / 140°C fan / 325°F / gas mark 3.
  2. Grease and line a tin to bake the brownies in, both 20 x 20cm (8 x 8in) or 20 x 30cm (8 x 12in) tins have worked well for me.
