Quick Pesto Pitta Pizzas; speedy little pizzas made from gluten free pitta breads, melting vegan cheese and delicious Sacla’ Free From Pesto!

 

There are no two ways about it – pizza is downright delicious.

Whether it comes from a supermarket freezer or a wood-fired oven, it is a delightful combination of hot dough, sweet tomato sauce and rich cheese. It is also incredibly customisable, as we have seen from the humble margarita’s journey from wonderful simplicity to the controversial monstrosity of ham-and-pineapple toppings.

Pizza truly is a gift from Italy. As is pesto, a naturally delicious traditional mix of herbs, olive oil, aged cheese and pine nuts. Since Sacla’ began to distribute their pesto to the United Kingdom and beyond, this classic Italian sauce and condiment has exploded in popularity, with all kinds of uses.

Unfortunately though, there are increasing numbers of people around Europe and the rest of the world who suffers from allergies and intolerances that cannot enjoy regular pizza any more, or the wonder of pesto.

Sacla’ have seriously stepped up their game recently, producing two new and frankly amazing pesto products with absolutely no dairy or gluten in them. They have taken a classic and made it accessible for so many people who usually have to restrict their diets, and they are remarkably tasty. With their Classic Basil and Tomato Free From Pesto jars, those with lactose or gluten intolerance can enjoy the taste of Italy without fear!

Today I have used these tasty new Sacla’ jars to create another deliciously accessible lunch or dinner – these quick pesto pitta pizzas. Therefore allowing those with allergies to taste the beauty of usually gluten-and-dairy-heavy pizza!

Using gluten free pitta breads, some vegan cheese, and a healthy helping of Sacla’ Free From Pesto, you won’t miss anything about a regular pizza with this tasty recipe. Plus, they can be ready in under 15 minutes, so they’re basically perfect.

If you don’t suffer from allergies or intolerances, you can enjoy these too! Make them as is, or simply use regular pitta breads and cheese, with some normal Sacla’ green Basil Pesto or red Tomato Pesto. I promise, anyone can enjoy these!

I am so happy with how these turned out, and even as a self-certified cheese fiend, I can wholeheartedly tell you that these are delicious with or without dairy.

To make these quick pesto pitta pizzas, simply preheat your oven – 220 C / 200 C fan / 420 F / gas mark 7 – and look out a flat baking tray.

Place your pitta breads on the tray. I tend to make 2 pitta pizzas per person.

Mix your tomato puree in a bowl with a little water to loosen it into a pizza sauce consistency. Feel free to add some olive oil or dried herbs for extra flavour.

Spread the tomato sauce onto your pitta breads.

Top with your chosen cheese – sliced or grated. I used a mozzarella-style vegan cheese, but a cheddar or Parmesan kind would work well here too!

Add the green or red Sacla’ Free From Pesto, dotting it all over the pitta pizzas.

Finally, add your sliced tomatoes (if using).

Season with a little salt and pepper.

Bake in the preheated oven for 5-15 minutes. The quick pesto pitta pizzas should be ready to eat after 5 minutes, use a longer time if you prefer your cheese and toppings to be browned slightly.

Remove from the oven, and cool for a couple of minutes. Adding sliced avocado, and some fresh basil leaves (if using).

Eat!

We enjoyed a few of these quick pesto pitta pizzas with a fresh salad on the side, but these would be equally delicious with some crispy chips too!

Below I have created a recipe for both the Tomato Pesto pizzas and Basil Pesto pizzas you can see here. Personally the green was my favourite: that combination of hot melting cheese and sauce with the cool, creamy avocado and herby pesto was just perfect. Though the red was great too.
